Green Sorbet Sour

Introduction:

Not close to a Kyle Mac original, really only switched out the main liquor and called it something different. Originally “Garden Mai Tai” from The Aviary and honestly never thought I would be using green beans in a cocktail, but here we are. My first sip and I (along with literally everyone who has tried it) fell in love. It instantly reminded me of lime sherbet from my grandma’s fridge oh so long ago. Easy(ish) to make and is a must try. Trust me, you won’t be disappointed. 

Ingredients:

  • 1 ½ oz. gin (used Leopold’s)
  • 1 oz. green bean syrup*
  • ½ oz. almond orgeat*
  • 1 oz. lemon juice
  • 1 egg white
  • ⅛ oz. 
Garnish
  • Lemon peel and black pepper
 

Preparation:

Combine all ingredients in a shaker with ice, shake vigorously for 13 seconds. Remove ice then shake for another 45 seconds (yes, 45). Pour cocktail into a medium sized nice cocktail glass, sprinkle with black pepper, express that lemon peel and toss it at someone you love. Look at that head. Believe it that you just made a beautiful cocktail. Savor in the sights before savoring in the flavor. 

Notes:

*Green Bean Simple Syrup:

  • 135g water
  • 115g frozen green beans
  • 115g sugar
  • Pinch of kosher salt
  • Pinch of black pepper

 

Blend all ingredients for 30 seconds on high speed. Strain liquid (it’s a pain: very mushy, recommend larger strainer). Discard chunks. Store in refrigerator.

 

*Almond Orgeat:

  • 115g water
  • 75g sugar
  • 37g skinless silvered almonds
  • Peel from half an orange

 

Add water, sugar and almonds to a sauce pan and bring to boil. Remove from heat and steep for 20 minutes. Add orange peel and transfer to blender/food processor. Just pulse a few times to break up almonds and orange peel, then move to a covered bowl to sit overnight. Following morning, strain and discard chunks.

-You can also buy almond orgeat. This recipe is a bit more orange flavored than anything I have purchased, but either will yield an awesome drink. And buying it will give you a drink without having to prep a day before!

-Original recipe also calls out for vodka. Honestly, both are damn delicious. Really a preference if you like gin or vodka, but the differences are subtle. I guarantee you’ll like it either way.
